La veille, vous pr\u00e9parez la p\u00e2te \u00e0 brioche en versant dans l\u2019ordre le sel, la farine, la levure, le sucre et le lait dans une cuve. P\u00e9trissez le tout et incorporez le beurre coup\u00e9, p\u00e9trissez jusqu\u2019\u00e0 ce que la p\u00e2te se d\u00e9tache des parois. Mettez la p\u00e2te dans un saladier l\u00e9g\u00e8rement huil\u00e9, filmez-la et placez-la au frais jusqu\u2019au lendemain.<br \/>2. Farinez votre plan de travail et \u00e9talez la p\u00e2te en un rectangle de 40 sur 30 cm.<br \/>3. \u00c9talez la p\u00e2te \u00e0 tartiner jusqu\u2019\u00e0 1 cm des bords. Parsemez les noisettes, les amandes et un peu de fleur de sel.<br \/>4. Enroulez la p\u00e2te pour former un boudin. \u00c0 l\u2019aide d\u2019un grand couteau, coupez le boudin en deux sur presque toute la longueur, cachez la f\u00e8ve, puis tressez la p\u00e2te en laissant la partie chocolat\u00e9e sur le dessus. Formez une couronne en joignant les deux extr\u00e9mit\u00e9s.<br \/>5. D\u00e9posez la brioche tress\u00e9e dans un moule \u00e0 g\u00e2teau beurr\u00e9 de 22 \u00e0 24 cm de diam\u00e8tre. Couvrez d\u2019un linge et laissez lever pendant 45 minutes \u00e0 temp\u00e9rature ambiante.
